Our team here at Jacaranda is filled with a range of dynamic personalities who are fun, driven, have the most utmost attention to detail and are most importantly passionate about what they do. Every member of the team has their own bit of magic that they bring to the mix, meaning life here at Jacaranda is most certainly nothing less than lively.
Having grown up with the family business Ian knows it inside out and from top to bottom. Over the years Ian has seen the team go from strength to strength and with Jacaranda now approaching its 20th Anniversary we are delighted to say the company remains as vibrant and progressive as ever.
Ian has always had a passion not only for fabulous food but also for bringing together the best people in order to achieve our collective goals of delivering the best events, food and service to our region.
Director & Head Chef
Jamie has been with Jacaranda for 9 years and is the creative genius behind all of our renowned food. He has a team of hardworking chefs who have followed him from company to company. His interest in food started from a young age and he developed his love for Asian food while travelling and working in Australia and Thailand. He has worked at Michelin starred restaurants in London and Sydney as well as being sous chef at the Admirable Crichton, one of the leading catering companies in London. When he is not testing out new dishes on the ever obliging Event Managers, he can be found cycling around Sussex or up a mountain somewhere. Every year Jamie hosts the renowned Chefs BBQ, so if you are lucky enough to get an invite, go!
Director & Operations Manager
Nigel is our Operations Manager and leads a strong team of event managers. After spending 10 years working for high end caterers in London, working at some of the most prestigious events and venues across the capital, it was time for a change of scenery and he is now enjoying bringing his wealth of knowledge and experience to the Jacaranda family. A keen golfer he always keeps his clubs in the boot of the car in case he can fit in 9 holes after a day’s work.

Senior Event Manager
JJ is our senior events and social media manager and has worked with Jacaranda since 2007. JJ worked in London for many years for various events companies before he took the leap to the countryside. In London he found a love for mixology, which he’ll always take any opportunity to share with friends and colleagues - it is well known that JJ’s cocktail training evenings are not ones to miss! He is WSET intermediate certified and also has a passion for cooking interesting new dishes and paring them with delicious wines. He likes to brew his own beer and his bitter has been tried, tested and approved by friends, colleagues and the local specialists themselves. If you can’t find him trying out food at new establishments or brewing his beer then you’ll definitely catch him watching his beloved Arsenal!
Office & Event Manager
Nix is the first person you’ll meet from our team and the central hub to our family here at Jacaranda. She works mostly in the office looking after our client’s initial enquiries, sourcing all of our fabulous staff as well as many other things, however we can’t keep her away from running the events too! Bury Court is where Nix started learning the ropes over 4 years ago. Nix initially pursued a legal career having worked at ELLE and FHM Magazine in London. She then moved to Verbier to work as Operations Manager for a luxury chalet company for several years to return to join us at Jacaranda. You’ll now find her running events across various venues over a sunny weekend in summer. When Nix isn’t working she is always planning some crazy adventure or scoping out the next best restaurant for Jacarandas Supper Club.
There was an Englishman, and Irishman and a Scotswomen…! Phern joined the Jacaranda team full of enthusiasm and now looks after and manages Bury Court Barn in Bentley. She has a wide variety in experience ranging from organising corporate events for Virgin Atlantic to looking after private functions and parties within the Polo industry. However missing the wedding buzz, she joined the Jacaranda team last year and hasn’t looked back. When not out running events you can find Phern on the Cowdray Pitch side lines watching a game of polo with a large g&t in hand.
Johnny has been in the hospitality business and worked across several roles through-out the catering and events industry for over 8 years now and brings a broad spectrum of experience to Jacaranda. He has organised various golfing societies, outside music events, and managed pubs and restaurants around the Chichester area. Johnny runs events at Ramster, Northbrook Park and Froyle Park and is also in charge of managing our fabulous staff. When he isn’t working he will be enjoying a round of golf with our Operations Manager Nigel followed by a few Cuban cigars, a glass of red wine from the right bank region of Bordeaux and a great cheese board to match.
Dan is also known as our Instagram chef! He loves all things food and photography and subsequently brings imaginative and inventive ideas to the table. He has been with us for 6 years and is one of Jamie’s right hand men. If you hear the chefs laughing, you can almost guarantee that Dan is the main source being our resident funny man of the kitchen. He also loves to talk about all things food and is more than happy teach everyone from our waitresses to our clients. When Dan isn’t working he can be found debating the latest football scores with JJ.
Jago has been by Jamie’s side for 9 years, they trained together and nowadays you can often hear Jamie, Jago and Dan batting new menu ideas off each other. Jago was head chef at Brightons established vegetarian restaurant, Food for Friends for 4 years. He is the guru when it comes to our special dietary meals and is able to create mouth-watering dishes for just about anyone. When Jago isn’t working, he can be found underneath his car doing his own version of “pimp my ride”.
Our own version of Mary Berry but with a twist! Lee is the master behind all of our desserts and loves to experiment with molecular gastronomy. He may be the youngest member of our team of chefs but he has recently returned after staging at the well-known Drakes restaurant. Having been at Jacaranda for 4 years, he has redefined our dessert menu and can turn a traditional dish into something exquisite and delicious.
Never underestimate the importance of a KP! So much effort goes into our events and a lot of it goes unseen behind the scenes. He has to make sure that all of our equipment is clean and ready for events. Given the amount of events we can do on a weekend, he is always incredibly busy! He also gets involved in kitchen prep and never afraid to get his hands dirty and help out.
Matty is the master of all of our behind the scenes logistics. Each and every event we run requires a detailed list of equipment and Matty has been in charge of ensuring that we have everything we need on time for 7 years. He looks after our fleet of vehicles and our warehouse. As if he didn't have enough on his hands, Matty has just become the very proud father to Olivia. Rumour has it that he was also on the Polish version of "who wants to be a millionaire" but unfortunately he used all of his lifelines. Being a vegetarian, he is also the guinea pig for all of the new vegetarian dishes that Jago creates.
Lorna has been running the Accounts Department at Jacaranda for the last three years. She keeps us all in line and loves to solve a good mystery payment! She is also responsible for paying the Jacaranda team so we all like her a lot!
When not at work Lorna spends most of her time providing a personal taxi service to her two teenage daughters!
